Eggplant Pizzas

I made this for dinner and it was the biggest hit!

500g Turkey mince
1 can Diced tomatoes
2 Onions
6 Mushrooms
3 Garlic Cloves
Splash of Red wine vinegar
Olive oil
1 Eggplant thickly sliced longways
Side salad

Start by putting the eggplant in the oven on high to roast with an olive oil and garlic glaze.
While they’re roasting start on the turkey topping. Chop the onions and caramelize in olive oil, then add sliced mushrooms.
Once brown, crush and add the garlic, and splash red wine vinegar all over the pan.
When they’re mixed well add the turkey mince and stir through until brown.
Finally add the diced tomatoes and leave it on high so it reduces.
I love to add all sorts of spices to this sauce like basil (preferably fresh), tarragon, rosemary, oregano and Moroccan spices
When it’s thoroughly cooked and reduced (allow 20 minutes) remove the eggplant from the oven (if they aren’t brown enough put the grill on to speed things up).
Top the eggplant with the turkey mince sauce and feta and pop back in the oven until melted.
Serve with a side salad of choice (rocket by itself is fine)

The turkey is super low in calories and the side salad is purely there to make you feel full, such a great meal before bedtime!


Christmas Control

It’s that time of year and everyone’s got Christmas parties, lunches, dinners, drinks, chocolates in the office and many more obstacles for those wanting to stay in shape!

Even I know its not realistic to stick to a strict diet and training schedule this time of year. But there’s a big difference between deviating and blowing out! There’s a few different ways to tackle this time of year, so pick the tactic that suits you best…

1. TRAIN HARDER. If you plan on drinking at all the parties and eating whatever at the lunches then burn it off in the gym. Really up the ante and throw in some extra sessions as well as upping the intensity!

2. ONCE PER WEEK go all out. If you have more than one event each week then stick to your diet and don’t drink except for at 1. That way you can guilt free get into the spirit of it, similar to the weekly cheat meal concept.

3. PICK YOUR POISON. At each party or dinner allow yourself one small indulgence. Maybe have a glass of wine or two but eat well. Or have a salad and no alcohol but enjoy the dessert.

Ultimately be responsible. 1 or 2kg weight gain this time of year isn’t too hard to work off. Especially in the new year, you’ll hopefully have fresh motivation and the hot weather and threatening bikini in your draw should motivate you to lose it but there’s a big difference between 2kgs and 5!

Berry and Apple Compote

This is a great side sweetener to loads of different meals or snacks. You can mix it with plain yogurt, have it on your oats, use in muffins, in or on top of pancakes, the list goes on!

Simply put frozen berries and diced apple in a pot with a spoonful or water and 2 tbsp or natvia or whichever sweetener you prefer. Leave to simmer with the lid on low for 20min then keeping the lid on let cool over a few hours. Store it in the fridge and use within the week or freeze.

I prefer to make my batch with a whole bag of frozen berries and just a few small green apples. That way I can have a small portion after dinner with yogurt as a guilt free snack!

Oat Flour

Instead of using refined flour when I’m baking I prefer to use oats that have been put through the food processor.

This can seem like a bit of a hassle if your always having to put them through a food possessor every time you want to cook so try putting a whole bag through so its in the cupboard. It’s a much better alternative to flour and you can do it with gluten free oats too!

If your in the habit of using better options with all your ingredients then cooking ‘naughty’ foods isn’t so naughty after all 🙂



Baby Banana Cakes

As you can see I’m loving pancakes for brekkie these days! I still have it on Sunday cheat day its that good!

These ones have:
1/2 cup oat flour
1 banana
2 egg whites
1 scoop protein powder
Cinnamon and nutmeg


Apple and Oat Pancake

This is my latest brekkie discovery! We’ve had stewed apples in the fridge all week (no sugar added of course!) and I decided to experiment a little…

Firstly ill put 1/2 cup of oats through the food processor until its like a flour. Then ill beat that up with an egg, a scoop of protein powder and cinnamon. Then ill mix in 1/2 cup of the stewed apples and pour onto a non stick pan!

It’s so quick and easy! A no mess brekkie you can wrap in foil and eat on the go!

Spicy Mince Mash

I’m not a big red meat eater and find that the easiest way for me to enjoy it is as mince. I try and have it at least once a fortnight if not weekly 🙂

I cook the mince in chilli, salt, pepper and garlic. Ill use a spritz of coconut oil on a non stick pan. While this is browning ill steam some broccoli and cauliflower so that I can mash it!

Once its all ready spoon the mince onto a bed of mashed veg and add a tspn of coconut oil and some crushed chilli (I’m very generous with my chilli). This yummy meal is a great metabolism booster with the protein, fibrous veg, coconut oil and spicy chilli!
