Breakfast Berry Stack

This was just too good to not share! Absolutely delish and FULL of goodness. I’ve been thinking a lot about how to get protein and good fats into brekkie, I’m not a huge eggs/meat eater and I’m starting to get over protein powder every morning!!

So this is what I came up with! Here’s how to make it….

100g chobani 2% natural yogurt
Handful raspberries
Tspn. Shredded coconut
Drop of vanilla essence
Stevia to taste
1 tbsp chia seeds
1/4cup water
(Mix all this up to make the soggy base. Let sit for 5min so chia seeds can soak up some of the water)
Then sprinkle on top:
Tbsp oats
Tbsp bran (the no sugar added kind that tastes awful on its own!!)

There should be enough liquid so as the oats and bran go soggy! If the chia seeds have soaked up ALL the water I will pour water on top until its just under the oats and bran.

Stick it in the fridge over night and enjoy an amazing brekki! It goes lovely and firm like a cheesecake đŸ˜‰ this is SO filling, you will most definitely be sustained throughout the morning!

Haloumi & Green Bean Salad

This tasted really good and fresh. I put loads of spinach in, blanched the green beans by letting them sit in boiled water for 3 minutes, and cut up cherry tomatoes and onion. Lastly I fried the haloumi for about 30 seconds on each side and topped it with lemon! Delish!

Chickpea Salad

This was a really yummy substitute for my usual green vege salad today! All it is..
200g Chickpeas
1 1/2 Cups of Rocket
1 Whole Tomato diced
1/4 Thinly sliced Onion
Drizzle of Balsamic Vinegar and Olive Oil
Half Lemon squeezed
Moroccan seasoning

I whipped it up last night for lunch today because I didn’t have time this morning and it made it ten times better!

Low Fat Sun-dried Tomato

I just keep making this dip so thought it was time to put it up on here. So simple. So yummy.

1 jar fat free semi sundried tomatoes
1 tub 95% fat free Philly cheese
Salt and pepper to taste

That’s it!! If you like it smooth put the tomatoes through the food processor before adding the cream cheese, but if you like it chunky (me!) then just chuck it all it together and just blend until mixed!

For a healthy meal I like to have it smeared over chicken breast and mixed in with diced salad and cold rice! Or for a snack just with carrot/celery sticks. Or if your having a bit of a treat with some bread like my Kalmata and Rosemary Sourdough. I’m a big believer in picking 1 area to indulge in at a time fat or carbs or alcohol.

Kalmata and Rosemary Sourdough

This was TOO yummy! I’m not a big bread eater at all, growing up with a coeliac sister meant things like bread and pasta were not staples in our diets. So when I do eat it its a treat and it needs to taste amazing!

Coles have a olive bread that’s divine and usually my treat of choice but I recently tried a rosemary bread that was so good I was inspired to fuse the two. This was a big success!

I admit I cheated a fair bit with this recipe, I just used a sourdough box set and threw it into my thermo mixer with a generous serve of olives and 2 sprigs of rosemary.

I served this up with my low fat sun dried tomato dip and it went beautifully together!

Scottish Eggs

I made these meatballs last night and they killed it!
First you boil however many eggs you need, then you need to make the turkey meatball mix:
Turkey mince (1 kg)
Ground coriander (2 tbspn)
Diced onion (2 small)
Garlic (4 big cloves)
Mustard (1 dollop)
All sorts of spices and a large drizzle of olive oil!
These quantities made 10 balls (I live with 3 boys)
Once you’ve peeled the shell of the egg you cover with mixture and fry in a pan.
I fried mine in oil mixed with curry powder which made the outside taste even better.

Basil Dip

This yummy dip is healthy and delicious! As long as you’ve got a food processor of some sort you’ll be able to whip this up in no time!

1 bunch basil
Tub of 97% fat free Philly cheese
Tbsp olive oil
Salt to taste

Great low carb snack if you pair with some celery and carrot sticks! Or mix into pasta or salad!
